  1. Using a microplane, grate 6 cloves of garlic into a paste.
  2. Next, in a medium size bowl, whisk together olive oil, garlic paste, Herbs de Provence seasoning, a teaspoon of salt and honey. Whisk everything together, make sure its well-blended.
  3. Add the marinade to the shrimp and slowly toss everything together, making sure the marinade coats the shrimp.
  4. Optional: add 1/2 teaspoon of cayenne pepper. Start with a small amount; you can always add more according to your taste preferences.
  5. Once everything is well combined, cover and marinate the shrimp in the refrigerator for at least 30 minutes or overnight.
  6. In the meantime, cut the lemon wedges and chop the parsley for garnish. Then put that aside.
  7. Once the shrimp has been marinating for at least 30 minutes and when ready to cook the shrimp, allow them to sit on the counter at room temperature for 15-30 minutes.
  8. Preheat oven’s broiler setting to high heat and make sure to adjust the oven rack about 4 inches from the broiler element.
  9. Give the shrimp a quick toss and shake off any excess marinade. Then, arrange the shrimp in a single layer on a wire rack on top of the baking sheet or use parchment paper.
  10. Broil the shrimp until they're pink and opaque, about 3-5 minutes.
  11. Pull them out of the oven and transfer them to a serving platter. Garnish with fresh lemon wedges and chopped fresh parsley or other herbs.

Notes

  • Tail-On or Tail-Off: You can leave the tails on the shrimp for a decorative presentation or remove them for easier eating. It's purely a matter of preference.
  • Optional: using a mortar and pestle, take 1 tablespoon of Herbs de Provence and crush the spices against the mortar in a circular motion. 
  • Add cayenne pepper. Start with a small amount; you can always add more according to your taste preferences. Adding cayenne pepper infuses a deep, spicy flavor that complements other seasonings like lemon and herbs.
  • Keep a close eye on the shrimp when they're broiling. They can go from raw to done in seconds! Overcooked shrimp will have a tough, chewy texture, so you'll want to make sure to pull them out as soon as they turn pink and get a little bit of charring on them.
  • If you don’t have wire rack, you can also use parchment paper, aluminum foil or silicone baking pads.
  • Make sure the shrimp are spread out evenly and not overcrowded on the pan. This allows them to cook evenly and get that perfect broiled char.
